Carrot Salad Recipe

Salad:

6 carrots, shredded (I use a vegetable peeler to do this & include the skins)

1/2 a carton of cherry tomatoes quartered

1/2 block of black pepper feta cheese, crumbled  

handful of smoked almonds diced 

handful of basil, shredded 

In a large bowl combine the ingredients

 

Dressing:

3Tbs apple cider vinegar

3Tbs olive oil

1/2' piece of ginger, grated

1Tbs toasted sesame oil

1Tbs honey

salt & pepper

8oz jar and lid

In a small jar mix the ingredients, screw on the lid and shake vigorously. 

 

Add the dressing, toss and enjoy!
